This vegan dish is made with a rich & creamy Malay coconut sauce that’s lightly spiced and enhanced with the fragrant aroma of coriander and lemongrass. Rich & sweet butternut squash cubes are cooked in the sauce until tender and combined with crunchy red peppers and snow peas to add bite. It’s then served with fluffy red pepper and brown basmati rice to make a colourful and warming meal.
It also is a source of fibre, is gluten & dairy free and is suitable for vegans & vegetarians.
