How to take summer salads from standard to sassy
The season of alfresco dining is upon us! Long nights, warm weather, BBQs galore and of course, we can’t help but say yes to a Pimms or two. Until we can head home from the office and enjoy those moments, we can only dream of the evenings that await. In the meantime, it’s important to also inject a touch of summer into our lunch time meals.
For those of us who regularly opt for a lunch of fresh leaves and veg, if your ingredients are unchanged, there are only so many times you can enjoy a salad before it starts feeling so ‘boring’. However, this doesn’t mean that we have to turn to unhealthy options.
Salads are all about variety and a range of options can still provide immense nutritional value. So, if your salads are feeling less enjoyable than usual, all you need to do is switch up the elements! This is where we can help. The Southern Salad:
A top choice of ours is a southern American style salad, as it is essentially a salad version of a fajita – what’s not to love?! The salad consists of sweetcorn, crouton-sized gluten-free tortilla pieces and Cajun seasoning added to lettuce, pepper, tomato, avocados and chicken (optional), topped with lime juice. A guilty pleasure of ours is to add a sprinkling of crushed nachos (GF of course!), to add texture.
The Fruity Salad (not to be confused with a fruit salad!):
Nothing says summer like a fresh, juicy piece of fruit. Although less traditional, fruity salads are hugely popular, and with a vast variety of fruit options out there, you’ll never be short of choice! A firm favourite of ours is the strawberry cob salad, with a parsley and chive dressing, chicken, strawberry, avocado, crumbled goat’s cheese (again, optional!) and boiled egg body.
We are also huge fans of nectarine and prosciutto salads, due to its juxtaposing taste of sweet nectarines with salty parmesan and Italian prosciutto slices. A top tip of ours? A simple sprinkling of pepper makes great seasoning for this dish!

Miso aubergine green tea noodle salad Asian inspired, this salad consists of four aubergine, brown miso paste, honey, ginger, cucumber and green tea noodles. The miso and aubergine are the perfect pairing, whilst the green tea infused noodles add an aromatic twist on traditional noodle dishes and salads.
The Quinoa Classics:
A statement food for those of us living a gluten and dairy free lifestyle, quinoa is a delicious ingredient, particularly when used to create salads.
We love a Herbed Quinoa & Chickpea Salad with Lemon-Tahini Dressing! What is tastier than quinoa? You may think ‘not much’, but wait until you’ve tried it paired with chickpeas, spinach, parsley, cilantro and green onion, before adding a handful of toasted pepitas and sliced olives and completed with a lemon flavoured dressing.
