Sweet Potato and Quinoa Soup

This soup is a lovely combination of flavours and texture, A subtly sweet yet spicy soup with sweet potato and Quinoa, a fantastic source of protein and nutrients.
Drizzle olive oil over the sweet potato and place in a preheated medium oven for 15 minutes
Meanwhile, heat the olive oil in a frying pan. Fry the onion gently until softened, around 5 minutes
Add the garlic, carrot red pepper. Fry gently for 5 minutes. Remove from heat, season with salt and freshly ground pepper, paprika and cumin
Add the stock (enough to cover all the ingredients) and quinoa to a large pan bring to the boil and then simmer
Add the onion/vegetable mixture and part-roasted sweet potato to the simmering stock, add a little more stock if required. Ensure all vegetables are covered.
Simmer the soup for 20 minutes until all the ingredients are soft. Blend or leave chunky
- 2 medium sweet potatoes, peeled and cubed
- 100g quinoa
- Vegetable stock
- Finely chopped parsley
- black pepper
- 4 tbsp olive oil
- 1 small onion, chopped
- 2 cloves garlic, chopped
- 1 carrot, finely chopped
- Half a red peppers, chopped
- 2 tsp paprika
